Three days is the first length at which you can book something in advance and still have a spare afternoon. It is also the length at which the south of the city becomes worth a full day.

Day three: the thing you booked
Whatever needs a timed slot goes here. In practice that is the aquarium, which sells timed entry and genuinely runs out, or Universal Studios, which is a full day and not an afternoon.

Or: the southern afternoon instead
If you would rather not book anything, the south is the better use of the day. Abeno Harukas, Shitennoji and Shinsekai sit within a few minutes of each other and make the easiest three-sight afternoon in the city, with kushikatsu at the end of it.
The evening that is worth planning
Tsuruhashi for yakiniku. It is east of the centre, it is priced for the neighbourhood rather than for visitors, and the covered market lanes around the station are the strongest smell in Osaka.

Booking, honestly
Two things in this city genuinely sell out: timed aquarium slots and Universal Studios express passes. Everything else can be decided on the morning.
